If kept at 0° F (-18° C) or lower temperatures, selected and frozen lobster meat will keep for a respectable 3-6 months. Take the meat from the tail and claws out of the shell. Remove as much air as you can before placing it in professional freezer bags. Lobster tails are offered for sale frozen, either raw or cooked. The lobster tail can be eaten as-is after defrosting if the shell is a bright red color or the meat is opaque, white with faint red mottling. Both raw and cooked frozen lobster tails are available.
