Canadian "Whole Red Lentils" are marketed by the producer as a whole seed, but more than 90% are decorticated before they are eaten. The seed coat color can vary from brown to pale green, grey, brown, or black. Whole Red lentil has low in calories, rich in iron and folate and an excellent source of protein. They pack health-promoting Polyphenols and may reduce several heart disease risk factors.
