Sodium Bicarbonate (Baking Soda)

Sodium bicarbonate is a mineral salt which was discovered in the 1800s. This compound is extensively used in food grade for increasing the volume of batters or doughs and manufacturing baking powder in the confectionery industry. Furthermore, in industrial grade, it is widely applied as an animal feed additive as well as in fire extinguishers and detergents. In the food industry, sodium bicarbonate is the primary agent generating carbon dioxide, which causes cakes, breads and biscuits to swell. Buffer is an agent that resists pH changes by adding an acidic or alkaline component. This substance can neutralize small amounts of the added acid or base. Therefore, it maintains pH of the solution relatively constant.
