How does the count per kilogram differ from size grade in shrimp listings?

Count per kilogram is the direct measurement of how many individual pieces fit into one kilogram, serving as the primary size indicator for shrimp. Size grade is often a trade-specific label that may not align precisely with the weight count, leading to confusion. Always rely on the explicit count per kilogram number in the listing to determine the actual piece size, as this is the metric used for pricing and portion control in professional kitchens.

What specific document proves the catch origin for wild Spanish crab?

Catch documentation specific to the species and region of harvest is required to prove the origin of wild Spanish crab. This document must detail the fishing area, date, and vessel to satisfy import regulations regarding sustainable sourcing. Buyers should request this record before confirming the order, as it is distinct from the general health certificate and essential for legal entry into many markets.

Why does glaze percentage matter for frozen shrimp net weight calculations?

Glaze percentage represents the ice coating applied to protect the shrimp during freezing, which adds weight that is not seafood. The net weight in the price excludes this ice, but buyers must calculate the payable weight based on the net figure to avoid overpaying. A high glaze percentage reduces the actual amount of product received, so the effective cost per kilogram of edible meat increases.

What happens if the establishment number on the health certificate is missing?

If the competent-authority establishment number is missing from the health certificate, the shipment will likely be held at the border for verification. This number links the specific consignment to the approved processing facility in Spain, confirming that the product was handled under regulated conditions. Without it, customs authorities cannot validate the sanitary status of the goods, causing significant delays or rejection.

How do quota openings affect the validity of a seafood quote from Spain?

Quota openings in the Spanish market can instantly change supply levels, rendering a previously quoted price invalid. Buyers must ask for a quote validity period that extends beyond the expected administrative processing time to account for these fluctuations. Once a quota is filled or opened, the price adjusts to reflect the new scarcity or abundance, so early locking of rates is critical.

What temperature setting is critical for preserving the quality of fresh tuna?

Fresh tuna requires a specific low temperature setting in the reefer container to prevent protein degradation and maintain texture. The exact degree Celsius depends on the intended use, such as sashimi grade versus cooking grade, but deviations can lead to rapid quality loss. Buyers must specify the required temperature range in the enquiry to ensure the carrier maintains the correct cold chain throughout transit.

What is the key difference between canned and fresh tuna listings?

Canned tuna listings specify the packing medium, such as oil or water, and the drain weight, which affects the final edible yield. Fresh tuna listings focus on the cut, whether steak or loin, and the freezing method used for preservation. These differences mean that pricing structures and logistical requirements vary significantly, with canned goods requiring less stringent temperature control but fresh goods demanding precise cold-chain management.
