How does glaze percentage change the actual fish I receive?

Glaze is the protective ice layer applied to frozen seafood to prevent freezer burn. The glaze percentage indicates how much of the total gross weight is water ice rather than fish tissue. If a listing states a high glaze percentage, you are paying for water that will melt and drain away upon thawing. Always calculate the net weight of the actual seafood by subtracting the glaze weight from the total package weight to determine the true cost per kilogram of edible product.

What is the difference between count per kilogram and size grade?

Size grade is a broad category, often based on length or weight ranges, while count per kilogram is a precise metric indicating how many individual pieces make up one kilogram. For smaller items like shellfish, count per kilogram is the standard trading unit because it is more accurate. For larger fillets, size grade is often used because individual counting is impractical. Buyers should verify which metric the seller uses to ensure they are comparing equivalent quantities across different listings.

Why must I request catch documentation for wild seafood?

Catch documentation is a legal requirement in many jurisdictions to combat illegal, unreported, and unregulated fishing. It traces the wild-caught species from the moment it is caught until it reaches the processing facility. Without this paper trail, customs authorities in the destination country may seize the shipment or impose heavy fines. The seller must provide this documentation before the goods leave France to ensure smooth clearance at your port.

How do cold-chain temperature records protect my shipment?

Cold-chain temperature records provide proof that the seafood remained at a safe, consistent temperature throughout the entire journey from the French facility to your warehouse. If the temperature fluctuates above the required threshold, the product quality degrades and safety risks increase. Importers use these records to validate compliance with food safety regulations and to reject shipments that show signs of temperature abuse during transit.

What happens if reefer plug availability is poor at the destination?

If reefer plug availability is limited at the destination port, your container may face delays while waiting for an electrical connection. This delay increases demurrage charges and risks temperature excursions if the container is moved to a less secure storage area. It can also force you to accept higher freight rates from carriers who guarantee plug access. Always confirm plug availability with your forwarder before finalizing the logistics plan for temperature-sensitive seafood supplies.

Does the freezing method affect the texture of fillets?

Yes, the freezing method significantly impacts the cellular structure of the fish flesh. Blast freezing is rapid and creates smaller ice crystals, which causes less damage to the cell walls and preserves a firmer, fresher texture upon thawing. Slow freezing creates larger crystals that rupture cells, leading to a softer, potentially mushy texture. Buyers should specify the preferred freezing method in their enquiry to ensure the product meets their quality standards for retail or processing.

How does quota opening impact the price of wild-caught species?

When seasonal or annual quotas for wild-caught species open, the sudden increase in available supply can cause prices to drop temporarily. Conversely, as quotas close, scarcity drives prices up rapidly. This volatility means that a quote provided when quotas are tight may become invalid the moment new catches are allowed. Buyers should monitor quota announcements in France to time their purchases for the most favorable pricing windows.
