Cardamom is one of the world’s ancient spices. It has a very pleasing flavor and aroma. Being expensive, second only to saffron, it is seen as a ‘festive’ spice and is often adulterated & substituted by inferior related plants like Siam cardamom, Nepal cardamom etc. However, it is only Elettaria cardamomum - grown in MALABAR region in INDIA, which is the true cardamom. Cardamom comes from the seeds of a ginger-like plant. The small, brown-black sticky seeds are contained in a pod in three double rows with about six seeds in each row. The seeds are crushed or fried before use as a flavoring. It has been used as a digestive since ancient times. The Arabs attributed aphrodisiac qualities to it, the ancient Egyptians chewed cardamom seeds as a tooth cleaner; the Greeks and Romans used it as a perfume. It is a flavoring for Arab and Turkish coffee which is served with an elaborate ritual.
