How does the peroxide value in an olive oil listing affect its suitability for frying versus dressing?

The peroxide value measures initial oxidation levels, which directly impacts smoke point and shelf stability. High peroxide values indicate early degradation, making the oil unsuitable for high-heat frying and prone to off-flavours in dressings. Buyers should compare the peroxide value against the destination's maximum allowed limits for food contact, as this spec is more critical than colour or aroma for long-term storage.

What specific allergen declaration is mandatory for Kalamata olives packed with garlic or spices?

If the olives are marinated or packed with additional ingredients, the label must declare garlic, spices, or any other allergen present in the brine. The ingredient list must be in the destination language and clearly state the presence of these components. Failure to declare these additives on the package leads to immediate rejection at the border, regardless of the health certificate status.

Does the mesh size of powdered spices in processed food blends affect the health certificate inspection?

Mesh size determines particle uniformity but does not directly trigger health certificate requirements. However, inconsistent particle size can lead to clumping in humid transit conditions, which may cause moisture ingress and microbial growth. Inspectors focus on the facility registration and the absence of contaminants, so ensuring the mesh size matches the buyer's processing equipment prevents downstream quality issues.

How does the brine concentration in preserved olives impact the required palletisation density?

Higher brine concentration increases the liquid weight per carton, which affects the total payload and stack strength requirements. Buyers must calculate the case count per layer based on the wet weight, not just the empty carton weight. Incorrect palletisation can lead to crushing at the bottom layers, causing leakage and contamination of other goods in the container.

What happens if the facility registration number on the health certificate does not match the packing plant?

A mismatch between the facility registration number and the actual packing plant invalidates the health certificate. Destination authorities view this as a discrepancy in the supply chain, potentially halting the shipment for further investigation. The certificate must explicitly name the facility where the processed food was packed and prepared to ensure traceability and compliance with safety standards.

Why does the production date matter more than the order date for olive oil quotes?

Olive oil oxidizes from the moment of extraction, so the remaining shelf life is determined by the production date. A quote based on order date ignores the time elapsed between production and shipment, which can result in receiving product near its expiry. Buyers should request the production date to calculate the true remaining usable life after transit, ensuring the product meets their own shelf life requirements.

How does ambient versus temperature-controlled carriage affect the peroxide value increase in olive oil?

Heat accelerates oxidation, causing the peroxide value to rise faster in ambient conditions compared to temperature-controlled environments. Even short exposures to high temperatures during transit can degrade oil quality, leading to off-flavours and reduced shelf life. Buyers should specify temperature-controlled carriage if the transit route involves hot climates or if the oil is destined for markets with strict quality retention standards.
